Cajun Food is a truly pure Americana cuisine and is world-renowned for its unique flavor and stout heat. Cajun food is both exotic and down-home comforting. Our spice has a sturdy savoriness and yet lacks any heaviness. Its bold peppery flavor and heat dominate the palette but a herblike woodsy sweetness comes along for the ride. This blend is clean with a subtle lemony citrus and an earthy finish.
Keep the Cayenne pepper handy to bump up the heat and…

The Low Country, the Atlantic coast of the south, has a rich and storied history and a culinary richness that few know the origins of; Beauford stew, shrimp and grits, hoppin’ John, and so on it goes. Our spice reflects the deep southern and African heritage of the Gullah-Geechee people of the low country.
It starts with a lemony sweetness that transitions to a mild tartness. The sweet herbs and exotic minty coolness give way to deeper savoriness and a bit of heat. It finishes with a spicy citrus tartness that leaves an enduring amalgamation of all of those flavors, and it just lingers like a fading memory.
This is a unique spice that is good for any white meat or seafood. It pulls you into nostalgic remembrances of long-lost times on the shores…even if you’ve never been.
A unique blend of seven distinct varieties of dried peppers imported from Mexico and the American southwest and then melded with Mexican herbs and spices to create a chili powder that is bright and acidic on the front end and deep, savory, and full of chile goodness at the finish.
When the land routes for the silk route were cut off the spice trade found a sea route . That sea route went through Africa. The Horn of Africa became the hub for spices coming from India and the far east as well as their own regional spices and herbs from the highlands on their way to Europe. All of these factors congealed and melded together to create a cuisine that is world-renowned. This blend harkens back to those origins with a heady and intoxicating blend spicy, bitter, and sweet. It is mildly hot, peppery with a mild tang, and an intoxicating and exotic fragrance that is like nothing else.
Originally a prized breakfast for the Mughal rulers (Nawabs/Begum) in India. The royal kitchens would present it for after-morning prayers. After the fall of the Mughal empire, it became a working-class treat.
Equally fitted to the elite or working class, this spice has a strong front of toasted Anise and eucalyptus with a mild bite. As the heat builds, the flavors shift to the sweet herbs, and a woodsy smoke and a minty tone add to the eucalyptus undercurrent that carries through the finish with floral notes and a hint of grapefruit that linger on your palette.
Although this dish is more common today as a lunch or dinner dish, we wouldn’t fault you for having this exotic treat in its traditional morning venue. Add a bit of cayenne to bring up the heat to a more conventional level.
Our Greek herbal blend harnesses the fresh and lighter side of Greek cuisine. The blend starts with a sweet floral woodiness with mild fruit and floral notes that create a deep umami. Minty-rye-like note blends with soft licorice that play in the background. It will finish with a slightly bitter, citrus flavor and intense lemon aromatics.
Our Greek spice blend harnesses the stronger savoriness, the umami of Greek cuisine. It is a deep, layered spice that starts with a solid toasted earthy deliciousness with a comforting herbal, almost evergreen notes. A pungent, bordering on bitter pepperiness and a minty cooling undercurrent swim in the background. This blend will finish with a spicy, woodsy, and comforting warmth and a hint of lemon that lingers on the palette.
